"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy and to make plans." - Ernest Hemingway
Recommended wine for venison: Voyageur. This is a sleeper from Alexis Bailly Vineyard, Minnesota's original vineyard. Voyageur wine was named for the French/Canadian pioneers who paddled their way through the St. Lawrence Seaway, all the way to Hastings, Minnesota, on the Mississippi River. That alone is reason to give it a try.
The wine is deeply colored with rich flavor; bold and opulent fruit flavors of black berries and smoky vanilla aromas from extensive aging in new mid-western oak barrels. Voyageur is a wonderfully balanced wine that drinks soft and supple when young yet rewards you with greater complexity as it ages.
